Saint Felicien Semillon Doux

Saint Felicien Semillón Doux is a sweet white wine from Bodega Catena Zapata, produced in Mendoza. It is a wine designed for more special moments: intense, complex, and distinctly different from the rest of the Saint Felicien line.

WINE PROFILE

It is a varietal Sémillon (100%) made from grapes affected by Botrytis Cinerea (noble rot), a process that concentrates sugars and flavors in the fruit. It has 79 g/l of residual sugar and a winemaking process where fermentation is stopped to preserve natural sweetness. The aging is mixed: 20% in new French oak for 12 months and 80% in tank on lees, which provides texture without losing balance. The result is a medium to full-bodied wine, with an unctuous texture, balanced acidity, and a profile where the sweetness is sustained, not heavy.

SUGGESTED PAIRING

It works very well with blue cheeses, foie gras, fruit desserts, and also with sweet and sour or spicy dishes where the contrast with the wine's sweetness adds complexity.
