Salentein's iconic Chardonnay. Part of the Primus line, which is only produced in exceptionally superior vintages. The particularity of this wine is its elaboration: fermentation with indigenous and selected yeasts, in barrels of different uses, with malolactic fermentation in 90% of the volume and aging on fine lees with bâtonnage. The result is a white wine of great texture, complexity and balanced natural acidity.
WINE PROFILE
100% Chardonnay from Uco Valley, Tunuyán, Mendoza. Manual harvest. Whole cluster pressing. Static settling at 5-8°C. Alcoholic fermentation with indigenous and selected yeasts in French oak barrels (10% new, rest second and third use) at 18-20°C for 20 to 28 days. Malolactic fermentation in 90% of the volume. Aging on fine lees with bâtonnage. Total aging of 10 months in French oak barrels.

SUGGESTED PAIRING
Very suitable for dishes made with poultry, pork, white sauces and mushrooms. Also with grilled fish and semi-hard cheeses.
